By default, recipes are put in shortest to longest for best fit. You can also sort recipes alphabetically by title or even manually sorted. Go to Editor Tools>Publishing Tool>Cookbook Options and Design and scroll to Recipe Layout for the sort recipes option.
Another tool to help you organize your recipes is to create your own categories and sub-categories for even finer control over grouping of your recipes. Go to Editor Tools>Category Editor for that tool.
