Recipes by default are put in shortest to longest for best fit. You can sort alphabetically, too. Go to Editor Tools>Publishing Tool>Cookbook Options and Design and scroll to Recipe Layout for the option.
There is also an option for sorting recipes manually. Select it in the Recipe Layout also. Once selected, you can then click the link next to the option to use the Recipe Sorting Tool and adjust your recipes as you like.
Also, you can create your own categories and sub-categories for even finer control over grouping of your recipes. Go to Editor Tools>Category Section Editor for that.
